SiFang is one of the largest mushroom farming town of China, producing thousands of tons of Jew’s Ear Mushroom (木耳) each year. Up till this day many mushroom farmers still rely on traditional techniques, involving the burning of coal and the use of formaldehyde in inoculation process.
